When looking for a sweet option with no added sugar and no artificial flavours, this recipe is an amazing choice. It's even more special because it's very rich in nutrients and perfect for the development of vegan kids with age 2+ years old.
I love making these and keeping them in my fridge. It's hard to resist eating them all in less than a week. These snack bites are packed with fiber, calcium, and iron from chickpeas, and they also provide a good source of fat from tahini. Plus, we have an amazing fruit adding the perfect sweetness to each bite.
Ingredients:
1 cup rolled oats
1 (400 g) can chickpeas, rinsed and drained
3/4 cup pitted dates
2 tablespoons chia seeds
1/4 cup tahini
1/2 teaspoon ground cinnamon
1/2 cup chocolate chips (optional)
1/4 cup shredded coconut flakes (optional)
1/4 cup shredded cacao nibs (optional)
Directions:
In a food processor, add the oats and blend until they form a flour-like consistency.
Add the remaining ingredients and blend until a ball starts to form.
Fold in the topping of your choice (chocolate chips, coconut flakes, cacao nibs, cacao powder).
Using 1 tablespoon measuring spoon, scoop out some mixture and shape it into little balls
